The PS3 only plays Bluray Disks and does have some games coming out with 60FPS rated at 1080p. So if you're looking for graphics, the PS3 is indefinitely something to think about.
There's also the Xbox 360 that also has an HD drive that can play HD-DVD's and games coming out at 60FPS rated at 1080p. Microsoft is coming out with a new version of the Xbox 360 with an HDMI port and 120GB HD within the next couple months...
So the choice is really up to you.

As of right now there are more film/movie companies going with Bluray than HD-DVD. And PS3 seems to be picking things up with their video game system. There's even a couple companies out there that have disk players that play both Bluray and HD-DVD. I highly doubt this will be one of those Betamax/VHS deals.

I just got a new TV (because of the PS3/Blue Ray). As a result, I also invested in the HD-DVD add on for my XBOX which seemed like a no-brainer. I was a big Netflix guy, but left after they began throttling my account (not sending new releases). With the advent of BlueRay/HD-DVD, I rejoined Netflix and it is the way to go. Most local video stores have a minimal selection. Titles are still a bit expensive to buy. You set up your preference for format and prioritize based upon your home setup. If you haven't invested in an Xbox 360, then I would say go PS3. I definitely prefer the BluRay player on the PS3 to the add-on. I've experienced a few lockups on the xBox and find the PS3 to be a nicer player. It's also quiet, doesn't get as hot and the Bluetooth remote is pretty awesome. Plus, there are more movies out on BlueRay and the trend seems to be continuing. As the previous poster mentioned, the PS3 transfers video/sound through HDMI. Much cleaner setup.

My vote is PS3. Games are thin, but will pickup. Fall of Man is the game to get with your system.

I bought the 360 when it first came out. I swore I would never get the PS3, but whipped out my credit card when I saw it become available at BestBuy. I think it was impluse + thought of it being "rare" + love for new technology. The fact that it doubles as a BlueRay player has really made me feel good about the purchase. It also helps that my wife enjoys movies. After the amazement of BlueRay, I opted for the HD-DVD add on. At $199, it's easily justified when you consider it comes with a remote and KingKong. With Netflix, 90% of the moves we watch are either BlueRay or HD-DVD. The rare indy film is DVD.

I'm the king at justification of tech purchases.

The xBox has the HD-DVD add-on. BluRay is the default in the PS3. You can pickup great and cheap cables at Monoprice.com. Highly recommend for all your cables. Do not overpay for Monster, etc. Not worth it.
