The screen will turn on whenever the phone does something "noteworthy" (at least in the phone's opinion). Examples of this are:
BT connection established
BT connection lost
Network connection established (leaving subway, going above ground)
Network connection lost (elevator doors close)
Network connection modified (EV -> 1x -> EV, etc)
I'm sure there are other instances this will happen, but don't worry, your phone is not possessed, it's just "female tempermental" (If you don't know what the problem is, I'm NOT going to tell YOU! .... )

2) Since I live in NY, I ride the subways on a daily basis. When I get above ground, the phone will not automatically pick up a signal. It will show as having 'No Service' so I have to go into Wireless Manager and turn the phone off and then back on to get reception. This gets quite annoying. My Network is set as 'automatic.'

As mentioned above -- just dial out. Even if your phone hasn't connected yet, it will try when you dial out. If you have two cell's (or a buddy with you). Try sending a TXT to the phone, I'm pretty sure it would receive it.

This is normal on any cellular network. The number of systems the call has to go through is fairly staggering (the initial ring-back is provided by verizon's interface, not the cell-phone). Beyond that, you'll notice your screen will turn on 1-2 seconds before the ringer is loaded and plays -- if you dial your phone and watch it, the phone probably notices it half-way through the second ring at the latest.
