Is there any way where it says ME to change it so it says your name instead?

That would be confusing. You can just name any contact "ME"

I chat with myself all the time....usually its all in my head....but occasionally its outloud

It'd be neat if you could have both your name and 'Me.' For example, if your name was Tim it would look like "Tim (Me):"
