Or does the server ony need to be set up for ActiveSync in order to push the email? I'd manually pull the email myself if I could just connect to the server via the device. I guess I am not sure if I am configuring it wrong or if its impossible without the server setup.

You can always install activesync locally and that will sync all of your information. Then you would need to use some sort of push email solution to get your new emails when away from your desk. If you had vpn capibilities at the office you could vpn in your Q to connect to the exchange server and download your email instead of pushing the mail out.
