I don't think you can; that's the way the Smartphone OS works. E-mail gets deleted every time a
Send/Receive is done.
On the Pocket PC, you can select when the
Deleted Items folder gets emptied (Manually, every connection, or immediately when you delete the E-mail), but I haven't found a way to use that on the Smartphone OS.
