Default Big Overage Charges

My wife and I have my mother on our 700 minute family share plan, since she would otherwise not be able to afford a cell phone. I just got the bill today and my mother used 792 peak minutes last month. This ended up costing me $182.00 in overage charges. Apparently, she was in charge of a charity event and was using her cell phone all month to coordinate things.

I am thinking of calling Verizon and going up to the 1400 minute plan, which would cost $20.00 more per month and would have covered all of our minutes last month. I don't want to sign up for a new 2-year agreement, though, so I don't know if this is possible. Has anybody had any luck back-dating the start time of the new plan, so that it would cover all of those minutes or am I stuck paying them?

My wife and I have had several unexpected bills pop up this month and this is not what we needed.
