Not sure with exchange but with pop on the Q one has the option to download 1 day, 3 days, etc to download all. You must select ALL to keep emails on your Q. Another way I believe works is to move emails you want saved to the draft folder if you do not have such settings for exchange either on the Q or pc via active sync.
