Checking email every 5 minutes would kill your battery in just a couple of hours - frankly, checking email every 15 minutes wipes out an unattended battery in an unacceptably short amount of time. I think that most people find the best equillibrium of battery life/convenience to be setting it at one hour.
It sounds like what you are looking for is a "push" email solution - one where your email server (needs to be IMAP) notifies your phone as email is received, "Blackberry style". There are a few third party apps that will allow you to accomplish this - here is one:

Perhaps someone else can direct you to the registry hack to add/switch server polling from 15 down to 5 minutes - I am quite sure that it wouldn't be satisfactory battery-wise, regardless of whether you use an extended life battery.
